Could you give us a snapshot into who Ellie Watson is?

So my names Ellie & my business name (or what most people know me as) is Elsa's Wholesome Life. I am a Dietician & Nutritionist from the Gold Coast Australia. I have published two cookbooks, with my third in stores on July 26th 2022. I am a mother to my son Bowie (who is two) and am currently pregnant with a baby girl! I also founded a business with my husband, called The Wholesome Store.

What are your three must try recipes from your new cook book, Simple Vegan Kitchen?

Ohhh this is such a hard one! At the moment, the air fryer section has been a go-to of mine. The Crispy lemon pepper cauliflower is definitely the pick from that section! 

There's also a bunch of toasties in this book - I just LOVE toasted sandwiches so much. I had one in my second book so wanted to switch it up and give some more options. There's an avocado, kale & pesto, a spicy pepperoni and mushroom, chive & three cheese. I think when we were shooting these I was just newly pregnant, so lived off them! YUM - I love a toasty!

And then my third choice is the smokey cauliflower steak with salsa verde. The verde sauce especially is SO delicious.
